In a nutshell
I was born in Italy, and for many years I lived and travelled around the world, getting to know the most varied cuisines. My passion for cooking started at an early age, at first with my mother, from the pasta to the sauces, the use of herbs and the choice of the right cuts for the right things, the love for fruits and the techniques of bakery and cake making.
After my first experience in Rome, my professional road took me to Perugia, a city in the heart of Italy where I learned how to work with meat and game; discovered wild vegetables like mushrooms, asparagus and truffles.. and had the luck to work in bakeries, butcher shops and restaurants where people loved what they where doing.
I then moved in Sussex, UK, where I saw what a new country can offer in terms of styles of cooking, products and sea food, with their culinary traditions.
I am meticulously detail oriented, and offer the highest levels of integrity, initiative, and goal accomplishment.
My culinary studies took place in Perugia’s Università Dei Sapori (University of Flavours, Umbria), where I specialised in the art of making bread, bakery, nutrition, food technology, history and evolution of food traditions & typical dishes, as well as food cost control and kitchen work.
I am a young chef with a professional chef experience in the kitchen of refined restaurants such as The Grand Brighton (2 AA rosette – UK); Hilton Metropole Brighton (UK); Castello dell’Oscano (Michelin guide – Italy); Il Civico Restaurant and Wine Bar (Italy) and La Contea Restaurant & Pub (Italy). I was also Manager of Kitchen and Catering Operations at Meta Gastronomic Supermarket in Italy.
